In my work, I've come across thousands of cookbooks. Oftentimes, I'm saddened because I see a terrific effort that is thwarted by recipe writing that is erroneous or vague or confusing. Authors can easily overestimate or underestimate the readers' culinary comprehension, and nothing is more frustrating than buying a book, buying ingredients, taking the time to create a dish that doesn't turn out because the recipe is misunderstood.
